Cool, Sweet and Quick Cucumber Salad

My son has developed an interest in gardening this year and brought me some of his cucumbers and jalapeno peppers today. I sliced them thinly and covered them with seasoned rice vinegar and Presto! Sweet cucumber salad.
Left to marinate for an hour this simple dish is delicious as a salad all by itself. I enjoy the sweet tangy fresh taste. Left to marinate a little longer, they soften a little but retain much of their crispness. Good in salads and sandwiches.

Did you grow the cucumbers and peppers? What is the dressing? Yumm, looks good
This looks and sounds very good! I must try it with those peppers. We are getting more cucumber than expected.
I usually do some very simple, but much appreciated thing that I learnt from a little old lady back home:
At least 1 cup (probably more) ordinary sugar. 2 - 4 capsules of white vinegar. Salt, white pepper, water. I slice the cucumber thinly with the cheese slicer. Some parsley for decoration.
All of this is approximately -- I don't have any exact measurements, I just try and add more vinegar.. very little at the time.

Your recipe sounds good too, Webby. I like anything to use up those cucumbers rather than let them go bad!
