Fast Dinner

Mediterranean Baked Omlette

Ok, so I cheat sometimes. Craig, my vegetarian son, appeared unexpectedly for dinner today and what I was planning to eat was coconut chicken left over from last night, which wouldn't do. He appeared hungry. I opened the freezer and spied a bag of Europe's Best Mediterranean Diced Vegetables and pulled it out. Poured a layer into a quiche dish, beat 6 eggs with 1/3 cup cream, added seasonings...salt, pepper, thyme, onion powder, nutmeg and a little parsley, poured it over the veggies, topped it with parmesan cheese then baked it at 350 for 30 minutes.

We ate it in front of the television.

Not bad! Vegetarian dish for him, low carb for me. If you want to try something like this but do not have "Europe's Best" frozen, just use a mix of fresh diced veggies...yellow, red and green peppers, onion, tomato, mushrooms, eggplant, zucchini.

Those plates? on the coffee table are new...I plan to use them on my Chistmas dinner table filled with cranberry sauce, green gherkins, and something else I don't know what yet....but aren't the dishes pretty? I love the message. Found these at Chapters.
